Easy summer salads

Happy Summer!  Backyard BBQs, block parties and beach days are in full swing.  If you are in need of some easy, healthy summer salads to accompany the grilled chicken and brats, give these a try.  They are three of my favorites, and 99% of the time someone asks me if I will share the recipe.  I'd love to!  Very little skill is required to throw these together, just a sharp knife and cutting board for some chopping. 
 
Tomato Feta Salad from Ina Garten - I can't wait until my garden cherry tomatoes are in for this one!  In the meantime, I buy organic grape tomatoes from Mariano's.  I also cut way back on the feta, because I love the tomatoes and herbs so much.  I would suggest adding the feta a bit at a time until the combo suits your taste.
 
Asian Quinoa Salad from Two Peas and Their Pod - Yum, yum, yum!  Edamame and quinoa provide fiber and protein to make this a good option for a main course for lunch or served on the side.  The sesame oil/ginger/soy sauce dressing is key in this delicious and pretty salad. 

Corn, Avocado and Tomato Salad  - You have probably had this salad before, I made it for years before I came across this exact same recipe on Pinterest on the blog from The Girl Who Ate Everything.  Eat it as a salad or as a dip on tortilla chips.  FYI, I always skip the lime zest due to complete lack of interest in zesting a lime.
